Zucchini Pie

1 pie crust
4 cups shredded zucchini or about 1 1/2 small-medium sized zucchini
1 cup chopped onion
1-2 TBSP butter
2 tsp Dijon mustard
2 eggs lightly beaten
1 cup mozzarella cheese
1 cup cheddar cheese
2 TBSP dried Parsley
1/2 tsp salt
1/2 tsp pepper
1 1/2 tsp basil
1/4 tsp oregano

In a large skillet, saute zucchini and onion in butter until tender and slightly cooked. In a large bowl, combine eggs, cheeses, seasonings and zucchini mixture. Pout into crust. Bake at 375 for 40-50 min or until inserted knife comes out clean. Cover edges with foil if crust browns too quickly.
